Granola Goals

This is the easiest Granola recipe, ever. It tatses amazing and contains 0 added sugar as well as being minimal effort. After making this once, there’s a good chance you’ll never buy granola again…

You’ll need

  • 120g oats
  • 100g nuts of your choice (I use hazelnuts, almonds and pecans cos they’re my faves)
  • 80g seeds of your choice (I use sunflower and pumpkin)
  • 150g dried fruit of your choice (I use chopped apricots, chopped prunes, cranberries and goji berries)
  • 1 teaspoon of cinnamon (optional)
  • 4 egg whites*

In a large bowl (free from any trace of fats or oils) whisk the egg whites to stiff peaks. Add the oats, nuts, seeds and cinnamon if using, and fold together.

Spread out on a baking tray and bake at 150 degrees for 20 minutes. Remove from the oven and stir to break up any really large chunks. Bake for another 12-15 until slightly golden and completely dry.

Leave to cool, then stir through the dried fruits. Keep in an airtight container; it should keep for around 3 weeks – if it doesn’t all get eaten before that.

The binding agent of the egg whites herr removes the needs for lots of sugar, syrup and oil. It also increases the protein content which keeps you fuller for longer. *All vegans out there – I haven’t yet tried aquafaba as a replacement, but rest assured I will give it a go and let you know my findings – or if you beat me to it let me know how it goes!

Feel free to shake up the quantities by using more or less of any of the dry ingredients. But be aware that the sweetness comes from the dried fruit in this recipe so omitting the fruit completely will remove any sweetness – but you might like it like that! 

I have mine with Greek yoghurt and fresh berries (when I’m not eating it straight out of the jar…).
