Sorbet Yay! Easiest Sorbet Recipe

The summertime screams for an ice cold, fruity, afternoon treat. Homemade sorbet is the only answer, isn’t it? A somewhat lighter alternative to ice cream; but please don’t forget about the high sugar content! It’s great served with fresh fruit, or a pour over a shot of ice cold liqueur for an easy dinner party dessert (or just for yourself, like I do.)

My sorbet recipe is so easy, and can be made with pretty much any fruit and the best part is – you DON’T NEED AN ICE CREAM MAKER! 

Sorbet’s are perfect for using up that leftover fruit from the fruit bowl that never got eaten, or if you’re a home grower and get a glut from the garden that you don’t want to waste; it’s suitable for summer and winter fruit too!

  • 500g of chosen fruit (cut in to pieces)   or 250g for smaller quantity 
  • 400ml sugar syrup (200g of sugar dissolved in 200ml water) or 200 ml for smaller quantity 
  • For sharper fruits such as raspberries, gooseberries etc, add the juice of 1 lemon/lime too

In a food processor, blend the chunks of fruit to break up and start to puree. Add the sugar syrup and blend until smooth. If using a fruit with seeds, you may want to strain the mix through a sieve to remove the gritty texture at this point.

Pour the mix into a freezer suitable container (tupperware) and freeze solid – at least 4-5 hours. Remove from the freezer and allow to soften slightly (about 10 minutes). Remove from the container and use a large knife to cut in to smaller chunks. Put the chunks into the food processor and blend until smooth – this may take a while and depending on the power of your food processor, you may need to do it in batches to avoid it getting stuck. The mix will go from looking like a slushy, to form a smooth, creamier consistency – if you have a double blade attachment; use it now!

Once all the mix is a smooth, almost creamy consistency, put back in to the container and freeze once more. Take out of the freezer to soften for around 10 minutes before serving to allow you to scoop it easier!
